RED QUINOA tabouleh

 

Hi, Semra here…Aylins mom. When it comes to nutrition all quinoa tastes the same and similar in nutritional value. Rich in protein, fiber, vitamins and minerals. I recommend rinsing before cooking to remove the bitter taste. This doesn’t affect the consistency and the texture.

INGREDIENTS:

2 cups red quinoa (Linked Here)
2 Persian cucumbers diced (Linked Here)
2 medium tomatoes diced (Linked Here)
1 cup chopped italian parsley (Linked Here)
1 cup chopped fresh mint (Linked Here)
1 cup sliced green onions (Linked Here)
1/4 cup olive oil (Linked Here)
1/4 cup lemon juice (Linked Here)
1 tsp salt (Linked Here)
1/2 tsp freshly ground pepper (Linked Here)

 

 

COOKING INSTRUCTIONS:

  • Place quinoa in a fine mesh strainer and rinse under running cold water and drain
  • Use twice as much water as quinoa, cook uncovered until all the liquid is absorbed 
  • Use 4 cups of the cooked quinoa with all the other ingredients in a large bowl
  • Add lemon juice, olive oil Salt&Pepper and mix well. 
  • Transfer to a serving serving dish and serve 
  • If you’re making ahead hold the salt until ready to serve
