Once in a while, we end up with 2 or 3 overripe bananas. Making a banana bread is the best way to put them to good use.

INGREDIENTS:
4 Overripe Bananas (Linked Here)
2 Eggs (Linked Here)
1/2 cup Vegetable Oil (Linked Here)
2/3 cup Whole Milk (Linked Here)
1 cup sugar (Linked Here)
2 1/2 Cups Unbleached Flour (Linked Here)
1 Cup Chopped Walnuts (Linked Here)
1/2 Cup Chocolate Chips (Linked Here)
1/2 Cup Raisins or Currants (Linked Here)
2 tsp Baking Powder (Linked Here)
1 tsp Baking Soda (Linked Here)
1/2 tsp salt (Linked Here)
Zest of one Orange (Linked Here)
COOKING INSTRUCTIONS:
- Preheat oven 350F degrees
- Mix flour, salt, baking powder and baking soda. Set aside.
- Mix sugar, eggs until creamy, add milk and oil
- Mash three of the bananas and add into the mixture
- Toss 1/4 cup of the flour mixture with walnuts, chocolate chips and raisins mix until they’re coated, set aside.
- Gradually add the flour mixture into the wet mixture. Try not to over mix.
- Add vanilla, orange zest, nut mixture and fold into the batter gently.
- Pour into greased and parchment lined loaf pan.
- Peel and slice the fourth banana in half lengthwise and place on top of the batter. It creates a beautiful look on top.
- Bake 60-70 minutes or insert a knife. Should come out clean. It may take longer, depending on your oven.
- Cool completely before sliced.
It can be frozen up to four months. If sliced and individually wrapped, make a easy grab for a snack.
