Hi, Semra here…Aylins mom. The inspiration for this recipe was from leftover grilled vegetables from the veggie kabobs we had a couple of days ago. As long as you know how to crack an egg, this is the simplest dish you can make. Just use these 5 steps below.

Any of your favorite veggies cut into small pieces
1/2 c of your favorite cheese shredded (Linked Here)
6 eggs (Linked Here)
2 Tbsp extra virgin olive oil (Linked Here)
Dash of salt & pepper (Linked Here & Here)
1. Chop the grilled vegetables into small pieces, sauté in olive oil, add chopped garlic and cook another minute.
2. Beat eggs (2 per person), season with Salt & Pepper
3. Make sure vegetables are evenly distributed in the pan. Sprinkle half of the cheese and the herbs on top.
4 . Add egg mixture, with a spatula lift around the edges to allow uncooked eggs run under on low heat. Sprinkle the remaining cheese on top.
5 . As soon as the eggs starts to set, place the pan under the broiler to finish cooking keeping a close watch on it. Remove the moment it starts to color. Slice and serve.
