WATERMELON & FETA salad with balsamic glaze

 

Hi, Semra here…Aylins mom. Watermelon and feta cheese may sound like an odd combination but the flavors work so well together.  This simple, yet colorful and refreshing salad is one of my favorites and I’m sure it will become yours too.

INGREDIENTS:
1  seedless watermelon cut in 1 1/2 inch squares (Linked Here)
Cherry tomatoes cut in half (as many as you like) (Linked Here)
Fresh mint leaves (as many as you like) (Linked Here)
1 cup crumbled feta cheese (Linked Here)
2 Tbsp extra virgin olive oil (Linked Here)
2-3 Tbsp balsamic glaze (Linked Here)
Corse or flaked salt to taste (Linked Here)
Skewers 6 inches long (Linked Here)

 

INSTRUCTIONS:
  • Arrange watermelon and cherry tomatoes on a skewer by alternating and place them on the serving plate 
  • Sprinkle feta and mint leaves between the layers of the skewers
  • Drizzle olive oil and the balsamic glaze, more feta crumbles and the salt. 
  • Serve and enjoy 

 

HOMEMADE BALSAMIC GLAZE:
If you can’t find balsamic glaze in a store near you you can make it at home very easily. I use the one from Trader Joes
2 cups balsamic vinegar (Linked Here)
1/2 cup brown sugar or honey (Linked Here)

 

INSTRUCTIONS:
  • Place balsamic vinegar and honey in a small non-reactive pan over a med heat stir until starts to bubble 
  • Turn the heat down and simmer until it reduced by half , about 20 minutes, remove from the heat 
  • After it cooled pour into a bottle and refrigerate. Will keep months.
