SEMRA’S SHRIMP SCAMPI

Hi, Semra here (Aylin’s Mom). A long time ago In San Francisco I had this Shrimp Scampi dish in a small restaurant that happened to be on a boat. Since then my recipe has evolved into what it is today. Every time I make it brings back memories and my love for the city. I hope you enjoy. xx, Semra

INGREDIENTS:

1 lb large shrimp 12-15 (Linked Here)
1 pint grape or cherry tomatoes halved (Linked Here)
5 Cloves sliced garlic (Linked Here)
4-5 scallions sliced diagonally (Linked Here)
1/2 cup roughly chopped parsley (Linked Here)
1/4 cup extra virgin olive oil (Linked Here)
1/2 Package of linguine (Linked Here)
1/2 cup white wine (Linked Here)
Zest and juice of one lemon (Linked Here)
Salt&Pepper (Linked Here)

COOKING INSTRUCTIONS:

  • Cook the linguine in a generously salted water according to the directions on the package
  • Heat a large sauté pan, add olive oil and garlic cook one min
  • Add shrimp sauté two minutes turn and cook another minute.
  • Add wine cook one minute
  • Add tomatoes and scallions sauté another minute
  • Add lemon juice and the zest
  • Add the cooked pasta and parsley mix until combined and serve
